Grilled Fish – A Healthy Home Version.

The Pandemic has always fancied a Chef in us. Meanwhile for me it is always being back to the kitchen to cook something simple yet tasty. This time it is a simple Seafood Recipe that is loved by all which seems to be a expensive dish at a 5 Star Hotel or a Fine Dine Restaurant. This recipe is also a lot less expensive when made at home.

For our family it is a one off meal wherein this day of the month is when dad makes a request for something to eat unlike me, who wants a new menu everyday. Unlike the last year this Lockdown was bit different for us as we stayed in different rooms infected from Covid. While the recipe is simple yet requires a bit of time for the preparation to have your Perfectly grilled Butter Garlic Fish.

Things that your require prior you can start the preparation:

  • Butter – 50Gms
  • Fish – Basa – 1 Kg
  • Bell Peppers – Red and Yellow
  • Mushroom – 100Gms
  • Broccoli – 100Gms
  • Garlic – 4/5 Strands
  • Salt
  • Black Pepper (Kali Mirch)
  • Lemon – 1 Full

As we start the preparation we can need to have the fish defrosted to create a marinate that tenders the fish and helps while we cook. For Marination all you need to do is add a bit of Lemon, Salt and Black Pepper over the fish and let it rest for atleast Half an Hour (30Mins) in the fridge.
Meanwhile the fish settles you can cut the Veggies into your desirable shape though cubes go pretty well as they are bite sized.

When you see the fish has become tender post 30 mins of marination its time for you to take the pan out and start Cooking –

1) Take a grill/normal pan and pour in 25gms of butter with finely chopped garlic.

2) When the garlic is slightly brown put in all the veggies in once and let it cook. Until slightly brown.

3) Add salt and pepper to taste and let is sear over medium heat. The veggies would shrink a bit also to keep in mind we have to stir the veggies continuously so they take the flavor of garlic into them and also ensure a crunchiness in them

4)Remove when done.

5) In the Same pan/Grille Pan add the remaining butter with Garlic and slight herbs like rosemary and basil.

6) Cut the marinated fish into slices and put it in the pan and let cook for at max 4 mins( until it becomes white on the inside).

7) Remove the fish very gentally and keep the play it in a plate meanwhile add the Remaining marinade of Lemon and Black pepper to the Garlic Butter and Let it reduce.

8) Remove the Reduction and place it with the fish meanwhile keep the veggies along it.

That you have completed the process of cooking the next thing you’ll need to do is grab a fork and start eating the fish. Ensure to add the reduction to the fish and the veggies to add more flavors to your dinner. Serve it in front of your family and enjoy being called a chef.

Note: This Quantity serves 3/4 people at once. As soon as the fish changes color from pink to white the fish is cooked, do not over cook it.
